Peanut Butter Creme Pie Recipe
Since a few people seemed interested in the Peanut Butter Creme Pie recipe and suggested I posted it, here goes!
I found this recipe by my FAVORITE Food Network Chef, Ree Drummond aka The Pioneer Woman. Her recipes are great and this one in particular is super easy and very cheap to make. It usually takes me about 15 minutes to make it, start to finish. I always store them in the freezer to preserve them until the day they are going to be enjoyed. Allow a couple of hours in the fridge to thaw enough before cutting...and don't forget it on the counter-top like my dad tends to do...they don't stay good that way. Duh!
Her recipe calls out home-made pie crust but, I'm too lazy to deal with that mess so I buy premade crusts instead. I alternate between regular graham cracker crusts and Oreo cookie crusts. Here is the full recipe, including how to make the crust in case your inclined to make it at home.

Ingredients:
Crust:
25 Whole Oreo Cookies
4 Tbsp. butter, melted
Filling:
1 c. creamy peanut butter
1 8oz. package of cream cheese, softened
1 1/4 c. powdered sugar
1 8oz. container of whipped topping (cool-whip), thawed
Steps:
For the crust: Preheat the oven to 350 degrees F. Crush the cookies until they're fine crumbs. Pour the melted butter over the top and stir with a fork to combine. Press into a pie pan and bake until set, 5 to 7 minutes. Remove from the oven and allow to cool completely.
For the filling: Beat the peanut butter with the cream cheese until smooth. Add the powdered sugar and beat until smooth. Add in the thawed whipped topping and beat until smooth, scraping the sides as needed.
Pour the filling into the crust, evening out the top with a knife or spatula. Chill for at least an hour before serving.
Warning: This is ultra, ultra-rich. Cut small slivers-your guests will thank you!

Now, I realize that to make the crust, she doesn't specify that you should take the filling out of the cookies, but I can't imagine how the crust would work if you didn't. So my recommendation is to only use the cookie part, minus the icing, to make the crust. This is why I go with premade...so much easier. ;) The other great thing about premade crusts, is they come in a disposable pan with a plastic protector top that you can flip over to use as a lid after securing it with the aluminum edge of the pan. See? Awesome right?

Renee: She's great! I could not go an entire day without peanut butter. Bran WOULD eat an entire pie by himself (and bitch about the stomach ache later) if I didn't stab his hand with a fork for hogging it. ;)
Starmomma: Go for it and tell me how you like it! This is the one recipe that I've been able to gloat about his dad liking and was able to make it before his girlfriend stole my thunder! lol
pbc: Sounds amazing! I've been playing with the idea of adding little things like that or Reese's Pieces, grated Hershey's chocolate, etc. It is very easy to get carried away with it. I know...I feel like my stomach is eating it's way out of my body at the moment!
