One of the easiest ways to tell for absolute certain that you released an egg is to chart your BBT. After ovulation, your temp will rise, showing that ovulation has taken place.
If you are JUST using opks and CM tracking, there is no way to know for sure that an egg was released. After your first OPK, you *should* release an egg within 12-48 hours.

Good luck!
